Ingredients:

1 cup rolled oats (gluten-free if needed)

1 cup almond flour

1/2 cup coconut flour

1/2 cup chopped walnuts or almonds (rich in omega-3 fatty acids)

1/4 cup ground flaxseeds (flaxseeds are a good source of omega-3 fatty acids)

1/4 cup chia seeds (rich in antioxidants and omega-3 fatty acids)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon (anti-inflammatory properties)

1/4 teaspoon ground turmeric (known for its anti-inflammatory benefits)

1/4 teaspoon sea salt

1/2 cup coconut oil, melted

1/2 cup maple syrup or agave nectar

1 teaspoon vanilla extract

1/2 cup dried cherries or blueberries (high in antioxidants)

Instructions:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, combine the rolled oats, almond flour, coconut flour, chopped nuts, ground flaxseeds, chia seeds, baking powder, baking soda, cinnamon, turmeric, and sea salt.

In a separate bowl, whisk together the melted coconut oil, maple syrup (or agave nectar), and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the dried cherries or blueberries.

Allow the dough to sit for a few minutes to let the flaxseeds and chia seeds absorb some moisture.

Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.

Flatten each cookie slightly with the back of the spoon or your fingers.

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
